Zucchini Tostadas

Serves 4

8 corn tortillas
2 zucchini, sliced
1 bell pepper, sliced thinly
1 cup cheese
Garlic powder
Chili powder
Vegetable oil

Heat 1 tbsp. oil in a skillet over medium heat. Saute sliced zucchini and bell pepper until tender. Remove from pan. Add a few more tablespoons of oil to the pan and fry tortillas on each side until golden brown.

Preheat oven to 400. Arrange tortillas on a baking sheet. Layer zucchini and bell pepper on each tortilla. Sprinkle with garlic powder, chili powder, paprika, and cumin. Top with cheese. Bake at 400 for 8-10 min.
